Ingredients:


Spaghetti (approximately for two servings)

2 tbsp olive oil

2 garlic cloves, chopped

Juice of 2 lemons

1/2 tsp cayenne pepper

1/2 tsp black pepper

Salt to taste

1/2 cup raw cashews

1/2 cup water

1 tbsp sun-dried tomato pesto or chopped sun-dried tomatoes with a little olive oil

Fresh parsley for serving

1 tsp dried basil


Instructions:


1. Cook the spaghetti:

Cook the spaghetti according to the package instructions. Once ready, drain and set aside.

2. Prepare the sauce:

In a large pan, heat the olive oil over medium heat.

Add the chopped garlic cloves and sauté briefly until fragrant.

Add the cooked spaghetti to the pan and mix well.

3. Add the seasonings:

Add the lemon juice, cayenne pepper, black pepper, salt, and dried basil.

Stir well to distribute the seasonings evenly.

4. Prepare the cashew sauce:

In a blender or food processor, blend the raw cashews and water until smooth.

Add the cashew sauce to the spaghetti and mix well.

5. Add the pesto:

If you have sun-dried tomato pesto, add 1 tablespoon to the spaghetti and stir. If not, you can use chopped sun-dried tomatoes with a little olive oil.
